Green Onion Galore! As I walked through the produce at "Goodrich" Grocery Store here in E.L. I found myself intrigued by this veggie. This long stalk with a white bulb at the end is part of the Allium family ( related to garlic and onions). I don't ever recall my mother ever using this in her cooking while growing up. If she did, it went un-noticed through my adolescent eyes. Green onions are added to many dishes for its added flavor and spring fresh taste. It is similar to scallions, green onions have a smaller bulb and are more mature than scallions. Because they are mature onions they don't have an over-powering taste as onions do. They offer a sweet and delightful taste to many dishes and soups. They are often used in soups and are sometimes called "soup onions". Because they come from the Allium family they have many health benefit characteristics. They not only will gave flavor to your meals but also a nutritious meal due to to its nutrient content.
