Creamy Spinach Pasta

My kids were at camp last week so to welcome them home yesterday I wanted to make them something that screams, "Welcome Home!" This pasta dish is super easy and very affordable. Since back to school shopping has drained both my energy and wallet this recipe was perfect for the occasion.


The ingredients are few.
And this serves 8-10 people at about $1.38 a serving!!

1 pound ground beef
16 oz package of Thin Spaghetti
1 block cream cheese
24 oz. traditional pasta sauce
about 2 cups fresh spinach
grated mozzarella cheese (for topping)


First, bring some water to a rolling boil in a large stock pot and cook your pasta according to package instructions.



Then, give the spinach a rough chop. It will seem like a lot but it will reduce when cooked.

divide your cream cheese into four equal parts.


Brown your ground beef over medium heat.
Then drain the fat.


 You can season your meat with some Italian spice if you have some. If not, you can add some salt and pepper to taste.


Add spinach and stir until spinach reduces.


Then add cream cheese.


It will be a little messy but keep stirring until the mixture gets nice and creamy.


Continue to stir out all the little lumps.


Add pasta sauce to the meat, spinach and cream cheese mixture and stir.


Since pasta is thin it won't take long to cook. I usually take one out to test for doneness.
Once it is done, drain and return the cooked pasta to pot.


Pour sauce over pasta.

Stir until all of the pasta is completely coated in the creamy spinach sauce.


I missed these two so much and I'm so glad they love their momma's cooking!
